Enchilada Soup
1 lb. boneless, skinless chicken breasts
1/2 cup diced onion
1 clove garlic, minced
2 cans chicken broth
1 cup red enchilada sauce
3 cups water
2 cups shredded cheddar cheese
1 tsp. salt
1 tsp. chili powder
1/2 - 1 tsp. cumin

Put all ingredients in crockpot and cook on low all day.
