Caramel Apple Cheesecake Bars with Streusel Topping
(Granny Smith cheesecake bars)
Preheat oven to 350 degrees. 
3 Granny Smith apples, diced finely
2 Tbsp. Sugar
1/2 tsp. Cinnamon
1/4 tsp. Nutmeg
Toss together in a small bowl and set aside. 
Crust:
2 Cups Flour
2 Sticks Butter softened
1/2 Cup light Brown Sugar
Blend until crumbly with fork. (consistency like cornmeal.)
Butter bottom casserole dish, Press down crust.
Bake crust at 350 for 22 minutes. (you can bake crust anywhere between 15-22.)
Cheesecake Filling:
2 (8 oz.) packages Cream Cheese softened
2 Eggs
1/2 Cup Sugar
Cream until sugar is dissolved, until creamy.
Streusel Topping:
1 Cup Flour
1 Stick Butter, room temperature
1 Cup packed light Brown Sugar
1/2 cup quick cooking oats
Cut in together with fork and butter knife. 
**********Take Crust out of oven baked for 22 min. Pour cheesecake batter over crust, alright crust is warm. Sprinkle apple topping on top of cheesecake. Sprinkle streusel topping over top of apples. Bake at 350 degrees for 30 minutes. Let cheesecake cool on wire rack. Store in fridge when cool, and top with caramel sauce when ready to serve. ( I use the Smucker's brand sundae syrup Caramel that comes in the squirt bottle. It makes a nice Caramel drizzle over the cheesecake bars when cut. Enjoy! :))
