Southwestern Pork Salad and Cornbread Mini-Muffins

Southwestern Pork Salad 
romaine lettuce
spinach
carrots
snap peas
red onion
red pepper
avocado
mandarin oranges
poppy seed dressing 
pork chops
2 t. chili powder
salt & pepper
1 t. oregano
½ t. cumin
olive oil

*Combine seasonings to make a rub.  Coat pork chops with olive oil, and then cover both sides with rub.  Grill. Cut in bit size pieces.

*While pork chops cook assemble the rest of the salad.  



Corn Muffins
1 c. corn meal
1 c. flour
2 T. sugar
½ t. salt
4 t. baking powder
1 c. milk
¼ c. sour cream
¼ c. oil
2 eggs

*Combine dry ingredients and mix, then add the rest.
*Bake at 350 degrees for 12 minutes (for mini muffins).
